The comment about the "little pies" comes from some of Gerson's observations about the decadent luxury and general flabbiness of so many aristocratic soldiers of the era. He scoffs that such men compare poorly with the ancient Roman legionnaires, who "did not drag after them three or four pack horses and wagons laden with robes, jewels, carpets, boots and hose and double tents. They did not carry with them iron or brass stoves to make little pies." (see: Tuchman's "A Distant Mirror", p. 439).
